It was cold outside last night and I wanted a quick winter warmer that I knew the cavebabies would eat. It’s a take on baked chicken but a bit more zesty!
- Olive oil
- Juice from one lemon
- Marinate the chicken in the fridge an hour or two before. Place the chicken in a glass dish. Put a few teaspoons of olive oil in, juice of one lemon, crushed garlic clove and oregano. Mix up and make sure everything is covered.
2. After an hour or two, heat oven to 180c. Take the mixture out of fridge. I like to minimise dirty dishes so marinate and bake in the same dish. Bake for about 35-40 minutes.
3. I served mine over a baked sweet potato. Yum!
