Chorizo and Chili Fritatta

All I can say is wow!  Wow meaning easy to prepare! Wow meaning fantastic in taste!  I made a good size portion for dinner and there were no leftovers!    

So how do you make this you ask?  I thought you would never ask!

Here’s what you’ll need:

  • Spicy chorizo chopped
  • 1 garlic clove diced
  • 1 onion chopped
  • 3 chills chopped
  • 1 can on chopped tomatoes 
  • Coconut oil
  • 1 bell pepper chopped
  • 12 eggs

Here’s what you do:

  1. Heat the oven to 180c
  2. Heat a skillet and add 1 tbsp of coconut oil.  Toss in your chorizo and cook until crispy.  Remove to a plate.
  3. In the same skillet, add your onions, garlic, Chili, bell peppers and tomatoes.

  4.  Put your eggs in a bowl and whisk well.  Then add them to your baking dish.

5.  Gently add the mixture from the skillet to your eggs.

6.  Place in the oven for 15 minutes.  After 15 minutes, add the chorizo to the top, put back in the oven for another 10-15 minutes or until the eggs are cooked through.

Absolutely delicious!  Give it a try and let me know what you think!  It’s a perfect Palio balance with the protein, veggies and healthy fats.  Perfect for a chilly evening in.
