A quiet Sunday afternoon and you’ve finished everything you need to do, except eat. What better way then to fill your tummy with a Bacon Lettuce Avocado and Tomato sandwich? Ahhh, the humble BLAT filled with crispy bacon, crisp lettuce, creamy avocado and tomato. All of these sumptious ingredients between two pieces of gluten free, toasted bread.
Yes, it’s a simple and humble lunchtime meal, but it beautifully encompases all things Paleo. Firstly, there’s the protein (bacon). I always end up putting 3-4 slices of very burnt bacon in mine. The protein serves to fill you up faster so you consume fewer calories and it helps build musle for all of those workout sessions! Secondly, in Paleo, you always have to pair your protein with a fibre and carbohydrate. This one has a triple whammy: lettuce, avocado and tomato. I like to use the avocado as a spread on the bread and then use the remainder bits in the sandwich – nothing goes to waste! A couple of pieces of lettuce and since I don’t really care for tomatoes, then an obligatory one is placed in the sandwich.
I ate two BLATs after my late morning run and chased it with a glass of cherry juice. Suffice it to say, I’m as full as a tick and won’t be looking to eat anytime soon!
