1 Sweet potato chopped
1 Onion Chopped
Handful of Spinach
3 Eggs, beaten
1. Melt the butter in a frying pan.
2. Add sweet potato and onions. Cook on a low heat until the onions carmelize and the sweet potatoes are cook through.
3. Add the spinach and cook until wilted – should only take about a minute.
4. Add beaten egg and stir around so it’s all scrambled and mixed in with the veggies.
5. Serve and enjoy!
It’s a perfect paleo dish combining the carbs and protein you need to start your day. It only takes about 15 minutes to cook! It’s quick and easy!
