I’m Italian and I think if I had to give up pasta I would lose my mind! In the last year I’ve switched over to Free From pasta. It’s made from rice and corn and I know some of you breathed a collective gasp! But oh well. This is one of my guilty pleasures. I concocted this little beauty today at lunch. It is completely wonderful!
1-2 package of raw scallops (just depends on how many you want)
2 Cloves of garlic crushed and chopped
1/2 bag of free from pasta
Dried Red Pepper (just because I like it HOT)
Grassfed butter (like Kerrygold)
1 cup of raw spinach
Grated goats cheese (optional)
1. Start cooking the pasta a you normally would.
2. In a separate pan, melt some butter. Once it’s melted add, the minced garlic and saute for a minute or two.
3. Add the scallops and cook through. For the last few minutes, add the raw spinach and red pepper. Cook until the spinach is wilted.
4. Drain the pasta.
5. Put your pasta on the plate, top with the scallops and spinach and sprinkle with cheese and the parsley (if you so wish. I did, so I sprinkled.).
It was absolutely yummy and filled me up the rest of the day! Enjoy!
