Paleo Tagliatelle with Roast Chicken and Broccoli

This is a nice winter warmer.  It’s filled with all sorts of yummy smells and tastes and it warms you from the inside.  It’s very simple and only takes about 5-10 minutes to make.

Here’s What You’ll Need:

  • 3 zucchini’s – peeled
  • 1 chopped onion
  • 4 slices of bacon, chopped
  • Butter

Directions:

  1. Start by peeling the zucchini all the way down to the core.  It will look like something below.

0022.  Saute the chopped onion and chopped bacon in a frying pan.  Cook the bacon until it is cooked through.

0033.  When the bacon is cooked to your level of doneness, add the zucchini peelings and a couple of pats of butter.  The butter helps make it a little bit creamier.  Only cook the zucchini for about 4-5 minutes.  If you cook it too long, it will just be slimy and lifeless.

0044.  Mix everything together and heat through.

5.  When done, put on your plate, add whatever meat and side you want.  I like roast chicken or salmon with mine!
