Chicken Piccata and Wilted Spinach

This tasty yet simple dish is packed with protein (21g to be exact) and loaded with vitamins and minerals.  It is fantastically Paleo and very easy to make.

Here’s What You Need:

4 Chicken Breasts

Olive Oil

2 Tbsp Olive Oil

2 Tbsp Parsley

2 Tsp Brine packed capers

Directions:

Rinse your  capers thoroughly.  They are packed in brine and will be very salty.  Once they are rinsed, set aside.  Heat your skillet and add the olive oil. Place chicken in the oil and cook on each side until lightly browned and cooked through.  Add the lemon juice and bring to a boil.  When you are the sure the chicken is cooked through, add the capers to warm them.  You don’t want to add them too soon and they turn to mush.  Sprinkle with parsley just after you place it on the plate.

Wilted Spinach

Here’s What You Need:

Spinach

Olive Oil

1 clove garlic chopped

Directions:

Heat your olive oil in a pan.  Add the chopped garlic and saute for just a minute.  Add the spinach and stir constantly until it is wilted.  Once it’s wilted, your done.  This only takes about a minute.

Put the spinach on a plate, place your chicken on top and you have a very delicious Paleo dinner.
