Spicey Sauted Prawns and Spinach

This is an absolutely sumptuously spicy meal.  Oh, and did I mention that it’s easy?  It takes about 10-15 minutes in total – that includes prep time and cooking time.  I love to have this for a quick lunch.  You can make it as spicy as you want.  For me, the hotter, the better.

This meal represents everything Paleo.  You have your healthy Olive Oil, fresh garlic and hot chilis.  This is all paired with a high protein food (prawns) and a high fibre, rich in vitamins veg (spinach).

Here’s What You Need:

Prawns (peeled)

2 crushed and chopped garlic cloves

Chili Paste (gluten-free)

2-3 Handfuls of raw, washed spinach

Olive Oil

Peel, crush and chop your 2 cloves of garlic. Set aside for just a minute.

Heat the olive oil in a skillet on a medium setting.  Once it’s ready to go, put your chopped garlic and a little bit of butter in and saute for a minute or two.  Add the prawns.  If they’re uncooked, cook until red.  If they’re the cooked variety, then cook long enough to heat thru.  Add the chili paste (To taste.  Obviously the hotter you want it, then add more.  It’s up to you!) – I usually add a 1/2 of the tube.  Mix everything well and then throw in the spinach and cook until it’s wilted.  Once it’s wilted, then you’re done!  Put it on a plate, sprinkle with a bit of parsley, and it’s ready to be inhaled!

I eat this on its own – it’s that good and filling.  If you’re still hungry after eating it, go back for seconds, or thirds…
