Bacon is…

I love food.  But I LOVE bacon.  This morning’s breakfast consisted of bacon, dairy free scrambled eggs and spiced baked apples.

For dairy free scrambled eggs, all you do is crack open the eggs and whisk everything together.  Do not add milk.  Just the eggs.  I suppose if you wanted to add something, I have been known to add coconut milk.  That is yummy to, but I am out of coconut milk at the moment.

For the baked apples, you need 5-6 medium apples, cored and sliced.  Mix with a bit of vanilla, cinnamon, cloves, nutmeg and walnuts.  In this recipe I added dried cranberries, but you can add raisins too!  Put in a baking dish and bake for about 25-30 minutes (until tender) at 190C.

Put everything on the plate for breakfast and you have a supercharged, good for you Paleo breakfast!  This should hold you until lunchtime.   If you’re still hungry after eating all this, add a second helping.  In Paleo, there are no portion sizes.  Just eat until you are full!

    The apples sound delish – I’m in South Dakota so I had to look up the conversion for the oven 🙂 For those Americans out there, that would be 375! Thank you for the recipe!
